Fall Traditions and Bacon Cheeseburger Soup

It’s beginning to look a lot like autumn. Bonfires. Hayrides. Apples. Pumpkins. Soup. Bacon.  

Wait. Bacon?

In our family, yes, bacon is part of our fall traditions.  

This year, our family will be enjoying our third annual soup night! This has quickly become a family tradition at my parents’ house. The kids and grandkids all come out to their house in the country. There are hay bales to sit on. A bonfire. Tractor rides. And soup.

Everyone that comes brings a crockpot full of soup. Maybe some bread or some dessert to share. We all sit around chatting and enjoying the various soups. Someone usually makes a chili. My sister usually makes vegetable beef soup. I make our family favorite – Bacon Cheeseburger Potato Soup.  

I remembered my mom finding a recipe for this soup many years ago but she lost it. I tried and tried to find it out in the big wide web. It just didn’t seem to exist. So, I took a couple recipes that had the qualities I was looking for and made my own. Today, I share this fall family favorite with you! 

One of my favorite things about making soup – measurements don’t have to be exact! I’ll include the measurements to give you a rough idea of what I use, but feel free to add a little more or a little less of any ingredient!  

Bacon Cheeseburger Potato Soup

Ingredients:

  • 1 pound of ground beef (cooked and drained)
  • 1/2 package of cooked diced bacon (I try to plan ahead the day I’m making this and cook extra at breakfast so it’s ready to go)
  • 1 cup sliced carrots
  • 1/2 onion diced (preferably cooked with the beef)
  • 1 tablespoon butter
  • 4-5 large potatoes (peeled and diced)
  • 1 box of chicken broth 
  • 1 cup of Velvetta cheese (I use about half of a big box)
  • 1 cup of milk
  • Salt/pepper

Instructions:

  1. In a large soup pot, melt butter, add in carrots. Cook over medium heat about 5-8 minutes.  
  2. Add most of the box of chicken broth (depending consistency, you may decide to add a little more later). Add potatoes, let come to a low boil and cook for 10 min. Make sure potatoes are fully cooked. 
  3. Turn heat down to low, stir in beef, cheese and milk. Add about half of the cooked bacon. Add salt and pepper to taste. Once all of the cheese is melted and all ingredients are blended, serve in a bowl with some bacon and grated cheddar cheese on top.
