Did you know there is a National Eat Your Vegetables Day? Well, there is, and it’s tomorrow, June 17!
There are many ways to celebrate, from visiting a vegetarian restaurant, supporting your local farmers’ markets (I recommend Dayton’s 2nd Street Market), or trying out a new recipe.
There is no wrong way to eat more veggies!
One way is to be adventurous and try a new dish. My family recently tried Roasted Root Vegetables with maple syrup and pecans (photo included below). The photo was colorful and looked gorgeous on Instagram; however, I recommend dicing the root vegetables and roasting as mentioned in the recipe included below versus the slicing technique that we used shown below in the photo. The dicing and then roasting technique will give those beautiful root veggies the heat and attention they fully deserve to be served up tender and delicious.
Roasted Root Vegetables Recipe
Ingredients
- 1 red onion, sliced
- 2 large carrots, peeled and diced to 1″ cubes
- 2 large parsnips, peeled and diced to 1″ cubes
- 1 large orange sweet potato, diced to 1″ cubes
- 1 large purple sweet potato, diced to 1″ cubes
- 1 bunch radishes, ends trimmed and halved
- 2 tbsp olive oil
- 4 tbsp maple syrup
- 1 tsp apple cider vinegar
- 1 tsp sea or kosher salt
- 1 tsp cracked black pepper
- ⅓ cup chopped pecans
- 1 tbsp fresh thyme
